O/t Superbowl Recipes

TIM'S FRESH GUACAMOLE

4-5 med-ripe avocado's
1 whole tomatoe cut in quarters
1/2 small onion cut in half
1/4 cup fresh cilantro
2 tblsp mayonaise
1/2 clove garlic
juice from 1/2 lime
1 fresh jalepeno
1 tbsp of picante sauce

put everything in a Cuisinart and blend
you can eliminate the mayonaise if you want to cut calories

serve with blue corn chips
I made this the other night....It came out really good. Think it might be perfect for today.
Has a nice kick if spicy is your thing....I made 1 change I used a taco cheese blend. If you have no oven proof pan just switch over, wasn't a big deal, certainly didn't lose flavor.

CHICKEN SALSA

1 1/2 lbs. boneless chicken, cut into bite size chunks
2 lg. onions, sliced
1 lg. green pepper, sliced
3-4 stalks celery, sliced
1 c. shredded cheddar cheese
1 sm. jar salsa
2 tbsp. vegetable oil

Heat oil in ovenproof skillet. Saute vegetables until crisp tender. Remove from pan. Add chicken and saute until chicken is white (about 5-10 minutes). Add vegetables and salsa to chicken and mix together well.
Bake at 350 degrees for 25 minutes. Remove from oven and sprinkle with cheddar cheese. Return and bake 5-10 minutes more, until cheese is melted.

Sweet and Sour Meatballs

2 lbs meatballs (browned)
Put in crockpot on high
Add:
1 jar grape jelly
1 jar chili sauce

Let simmer about 3-4 hours
Easy and yummy.
I have a great recipe for sauteed Bear meat...lol

Cheesy Potato Bake

I bag of hashbrown cut frozen potatoes
1 stick of butter
16 oz. of sour cream
1 can of cream of mushroom soup
2 cups of shredded cheddar


Let the butter soften. Grease a baking dish and pre-heat oven to 350. Thoroughly mix all of the above ingredients in a bowl. Add to baking dish and bake for 1.5 hours, stirring occasionally.

This is my MIL's recipe and always the first dish consumed at any event. Of course nobody knows all the ingredients...LOL...but if you are throwing health food out the window for the day, this is a great pick.
I don't know Doog..does it include Cheese(head)?
Thai Iced Tea

1 gallon water
8 Chinese star anise, ground
1 tablespoon orange flowers
1 tablespoon powdered vanilla
1 pinch of clove powder
1 pinch chopped cinnamon
3/4 quart long cut China black tea leaves
1 to 2 cups sugar
1 quart half & half
red food coloring
crushed ice

Boil water. Add star anise, orange flowers, vanilla, clove, cinnamon, and tea leaves to boiling water. Continue boiling for 3 to 5 minutes, stirring constantly. Remove from heat. Cover and allow to steep until luke warm. Strain, and add sugar to taste. Serve in a clear glass over plenty of crushed ice. Top with half & half.

6. Take pizza rolls out
7. Eat pizza rolls

9. Rinse and Repeat

For Wisconsin residents- (Take a sausage, stuff it with another sausage, wrap it with a brat and add cheese. Thowing up not needed as it happens anytime you are in Wisconsin anyway)
