Aren't you the one that posted the key lime pie recipe? What is it posted under? I'm freaking out I can't find it...you got me bakin'.

You have to get the right Key lime Juice.It is not green.Whole Foods are a speciality food store that will carry it.If you can find some real key limes,then you can juice them.Thats a bit tedious but this is just another little element that will make you the "Queen of the Day".You can usually find the juice.Make sure its from Florida or Persia.
First-
Make your crust.I do a pate brisee.Its gives it a butery type of a crust.

Heres how to make the dough.If you have a cuisinart use the pastry blade.
1 1/4 cups of all purpose flour
3/4 stick of real unsalted butter cold,cut into bits
2 tblsp cold veg shortening
1/4tsp salt
3 tblsp ice water
In a large bowl blend with your finger tipd the flour,butter,veg shortening and salt until the mixture resembles meal.
Add the ice water,toss the mixture until the water is incorporated and form into a ball.
Lightly knead the ball,with the heal of the hand a few seconds to distribute the fat and form back into a ball,Dust the dough with flowe,wrap it in wax paper and chill for 2-3 hours.

Pre heat oven to 400.Press the dough into a 9" pie pan and leave a 1/2 " over hang.You dont rolll out the dough.Thats nice.
Crimp the edges decoratively.Prick the bottom with a fork. and chill the shell for 30 minutes
Take out shell,roll out wax paper and weight it down with raw rice or raw beans.
Put in the lower third of the oven and bake for 10 minutes
Take out,remove the wax paper and rice or beans,and bake for another 10-15 minutes more until it is lightly colored.Transfer to a rack,and let it cool.

Make the Filing-
3 egg yolks
1/2 cup of frshly squeezed or bottled Key lime juice.I would definitely try to find real key limes
1 lemon and one regular lime.
1 cup chilled heavy whipped cream
one 15oz.can sweetened condensed
3 tblsps. of confectionary sugar
In a bowl mix the egg yolks until light and lemon colored
Add the lime juice and some lime rind., 1 teaspooon.
Beat in the condensed milk



*Now....here comes my little secret.I will add one extra egg yolk,they call for 3 but I put in 4.I will put in the 1/2 cup of freshly squeezed key lime juice but then I will add 4tblsp of fresly squeezed lemon juice.I will mtch that with about 3 more tblsp of codensed milk.


Pour this custard into the cooled crust.
Reduce the heat to 350.Bake the pie in the middle of the oven for 15 minutes,transfer to a pie rack[which for me is the top of my gas burner.
Let the pie cool completely,I mean at least an hour.
In a well chilled bowl that youve had in the freezer,beat the whipped crem untill it holds almost stiff peaks.(Actually, the thought of eating this is giving me a stiff peak.LOL)Sift the confec.sugar in it until it holds almost stiff peaks.

Put on to top of the pie with a spatula.Chill in the refrig.about an hour.

* My second little touch.Ill grind some real lime,put in a bowl,add a couple of tsp.of key lime juice or more if needed.Mix it up with some sugar.Put it out on a cookie sheet lined with foil and use that as a topping on the whipped cream.It looks pretty and its kind of like a candied lime pieces.
