Kathi/cynical One..recipe White Choc.pecan Pie



Heres how to make the dough.
1 bag of coconut* my version
1 1/4 cups of all purpose flour
3/4 stick of real unsalted butter cold,cut into bits
2 tblsp cold veg shortening
1/4tsp salt
3 tblsp ice water
In a large bowl blend with your finger tipd the flour,butter,veg shortening and salt until the mixture resembles meal.Add 1/2 cup coconut
Add the ice water,toss the mixture until the water is incorporated and form into a ball.
Lightly knead the ball,with the heal of the hand a few seconds to distribute the fat and form back into a ball,Dust the dough with flower,wrap it in wax paper and chill for 2-3 hours.


Pre heat oven to 400.Press the dough into a 9" pie pan and leave a 1/2 " over hang.You dont rolll out the dough.Thats nice.
Crimp the edges decoratively.Prick the bottom with a fork. and chill the shell for 30 minutes
Take out shell,roll out wax paper and weight it down with raw rice or raw beans.
Put in the lower third of the oven and bake for 10 minutes
Take out,remove the wax paper and rice or beans,and bake for another 10-15 minutes more until it is lightly colored.Transfer to a rack,and let it cool.

Reduce the oven temp to 375

Ingredients for the filling;
*This is where my own version comes in,to he chilled pie crust layer the bottom with a high quality white chocolate.like Ghiradelli.
2 cups dark corn syrup
1 cup sugar
3 tblsp. unsalted buter,melted
3 tblsp all purpose flower
5 large eggs
1 TBLSP DARK RUM..if you are a recovering alchoholic they have some rum favoring,saddly there is no comparison to the real stuff.It gets cooked out.
1/2 tsp vanilla
2 cups pecan halves

Vanilla Ice Cream Bryersons Double vanilla....its really creamy
lightly toasted coconut

make the filling;
In a large bowl combine the dark corn syrup,sugar,melted butter,and the flour.In a seperate bowl beat the eggs with the rum and the vanilla.Add the egg mixture to the to the sugar mixture and combine well.Arrange the pecans in the pastry shell on top of the white chohoclate and pour in the filling.Bake the pie in the middle of the oven for 40 minutes.Let the pie cool completely ,then set it the refrig. so the chocolte will harden again.
When you are ready to serve a piece,nuke it about 12 sec.
Put some Ice Cream on top and have your insulin shot nearby.LOL
